(My Easy Bread ) One of the consequences of there only being two of us in this house and eating most of the time is the fact that we have a difficult time using up a loaf of bread before it goes stale.   I really like good bread and a good loaf of bread can be somewhat expensive, so I don't like for any of it to go to waste.  It only makes sense to have a few things up your sleeves that you can do with it . . . like bread pudding and such.   I hate waste, don't you? This is a cookery book I have had for a while, by Tamasin Day-Lewis. It's a jewel.  It's filled with lots of lovely recipes for dishes that are not only economical but also delicious.  Recipes such as this Bread Soup, which she admits to originally pinching from Anna Del Conte. I love cooking and the beautiful chemistry that happens when you throw ingredients together.  Sometimes it is so amazing.  Who would ever think that with a few ingredients such as olive oil, stale bread, ...

Using up leftovers . . . Beef Stew

We had company for supper on Saturday night and I prepared a hearty wholesome meal for us all, Beef Stew and Dumplings .  I served it with fluffy and buttery mashed potatoes and it went down a real treat.  I made extra so that I could have leftovers, because .  .  . as everyone knows things like Beef Stew always taste even better a day or two later on.  Not sure why that is, I only know it is.   Trust me on this. I am a person that has never minded eating leftovers.   I love them.  I do know that some people are not too fussed on having leftovers however, but it seems such a waste to throw good food away so I am going to give you some really great ideas today to use a leftover such as Beef Stew.  Bear in mind that this would work with any type of leftover stew really, chicken, lamb, etc.  They are both really easy. I do so love my computer.   Having a computer has added such a special dimension to my life.  I have met some really special people via this medium and been able to experience a lot of really wonderful things that I might not have had I not been the owner of a computer and the author of several blogs!    I have always stored my photos on photobucket and pay a hefty price for the priviledge.   That is where I keep all of my food photos and normally it's worked very well for me . . . until a couple of days ago.  I literally have not been able to get the site to load for me, which is very frustrating for me as almost all of my food photos are on there, and I can't get at them!  Grrrrrr!!!!  I am really hoping and praying it is a temporary blip!    Anyways, all of the recipes and reviews I have in my queue to post will have to wait until I can get access to my photos and I am really hoping that will be soon, or else I wi...

Roasted Roots and Wheatberries with a Lemon Vinaigrette

I do the same thing every year.  I buy in far too much veg for the holidays and then am left with a surplus which I am trying to use up at the beginning of the new year.   It's usually a whole lot, but not a whole lot of anything, if you know what I mean. When I looked into my vegetable drawer yesterday I saw a whole lot of normal carrots, a couple of white carrots (Yes, I did say white.   Apparently that's a variety.  I got them in a veg box in December) a few purple carrots (see my last explanation) an acorn squash, a small to medium sized white turnip.a bunch of fresh thyme and a few other odds and sods . . . most not in quantities large enough to cook any one thing, with the exception of the orange carrots.     I peeled and chopped them into large pieces and added a chopped red onion and then I roasted them in a hot oven along with some garlic, a good grinding of black pepper, a few sea salt flakes, some olive oil and a few springs of that f...

         I don't know about you, but I am about done with all that holiday food of the past few weeks.  Today I was craving something simple.   I also wanted to use up a bit of stuff that I had leftover from the hols . . . but I didn't want it to be holiday food, if you know what I mean.      I had some chorizo that was left from all the finger food snacking/tapas occasions . . . and some cheddar cheese that needed using up and so I decided to torture the Toddster with some pasta . . . because as all my readers have surmised.  He only thinks he doesn't like pasta.  He usually eats it up whenever it is served and seems to enjoy it.  Methinks he doth protest too much.  'Nuff said.        Anyways.   I browned the chorizo in a large skillet and added onions and garlic, until everything was nicely softened and fragrant.   I then added some stock, tomatoes and pas...

Amazing Leftovers

So here you are. It's boxing day and you have a whole fridge filled with leftovers. What to do . . . what to do . . . I thought I would give you some tasty ideas this morning to help you use up some of those scrummy leftovers. Of course you could just have a reheat of the leftovers, but it's also nice to dress them up in a few different ways too! Ham Leftovers: We like to have ham, cut into thick slices and fried in butter along side of our fried eggs for a special boxing day breakfast. Just melt some butter and add the ham once it begins to sizzle. Cook until it begins to get crisp on the edges, flip over and repeat on the other side. You can chop it up and add it to your favourite macaroni and cheese recipe, or to a pan of scallopped potatoes.
